Thieving

Thieving lets you commit theft. In game, of course.

Because of the possibility to take damage, It's best to have some food equipped so you can eat without breaking from thieving. There is a base success rate of 57.5% when pick-pocketing. This chance is increased by 0.7% for each level in thieving you have above the target's level requirement, and is further increased by mastery. This chance is capped to a maximum of 95%. When you wear [Thieving Gloves] with charges left the success rate is increased by 10%, and the success rate may exceed 95%. Success rates over 100% do not allow for multiple pickpockets per action.

Mastery

Increasing your mastery level for a thieving target increases your chance to pickpocket by 0.25%.
